A particular favourite – one of the easiest and tastiest meals we cook…

  • Onion (chopped)
  • Garlic (two cloves)
  • Pepper
  • Bacon
  • Risotto rice
  • Mixed herbs
  • Stock cube

Chop the onion, garlic and pepper (finer the better), add a small amount of oil to a saucepan and heat the onion and garlic until softened (don’t fry!). Once softened, add the chopped pepper and sliced bacon and continue to heat until the bacon is cooked.

Once cooked, add the risotto rice and stir whilst the rice absorbs the moisture in the pan. When absorbed, add the stock and continue to heat over a low heat. Stir occasionally and once the stock is absorbed add the pepper, salt and herbs to taste.

Serve and garnish with some parmesan and enjoy!
